A Puerto Rican favorite featuring mashed fried plantains, garlic, and savory shrimp.

Ingredients

  • 4 green plantains
  • 4 cloves garlic, minced
  • ½ cup pork rinds, crushed
  • 3 tbsp. olive oil
  • Salt to taste
  • 1 lb. peeled and deveined shrimp
  • 2 tbsp. butter
  • ½ tsp. paprika
  • Juice of 1 lime
  • Fresh cilantro for garnish

Directions

  1. Peel the plantains and cut them into 1-inch pieces.
  2. Heat oil in a skillet and fry the plantain pieces until golden and tender. Remove and drain.
  3. Mash the fried plantains with garlic, crushed pork rinds, olive oil, and salt. Work in batches if needed.
  4. Form the mixture into small bowls or mounds and set aside.
  5. In a skillet, melt the butter and sauté the shrimp with garlic and paprika until the shrimp are pink and cooked through.
  6. Add lime juice and toss.
  7. Serve the garlic shrimp over or alongside the mofongo. Garnish with cilantro.
