A Puerto Rican favorite featuring mashed fried plantains, garlic, and savory shrimp.
Ingredients
- 4 green plantains
- 4 cloves garlic, minced
- ½ cup pork rinds, crushed
- 3 tbsp. olive oil
- Salt to taste
- 1 lb. peeled and deveined shrimp
- 2 tbsp. butter
- ½ tsp. paprika
- Juice of 1 lime
- Fresh cilantro for garnish
Directions
- Peel the plantains and cut them into 1-inch pieces.
- Heat oil in a skillet and fry the plantain pieces until golden and tender. Remove and drain.
- Mash the fried plantains with garlic, crushed pork rinds, olive oil, and salt. Work in batches if needed.
- Form the mixture into small bowls or mounds and set aside.
- In a skillet, melt the butter and sauté the shrimp with garlic and paprika until the shrimp are pink and cooked through.
- Add lime juice and toss.
- Serve the garlic shrimp over or alongside the mofongo. Garnish with cilantro.
