  • Let’s prep the meat first. Clean the meat the way you normally do. I usually clean my meat with lime, lemon, or vinegar. Cut the lime or lemon in half. Rub the lemon or lime pices on every piece of meat. If you are using vinegar, give the meat a gentle wash with the vinegar mixed with water and then rinse.
  • Remove any excess fat and rinse the meat thoroughly. Pat dry the pork neck bones with paper towels and place them in a bowl.
  • Add seasoning blends and olive oil.
  • (You need to use your hands for this part.) With both hands, massage every piece and make sure they are well coated with the seasonings blend and oil.
  • Let the meat marinate for at least 1 hour before roasting. This will help the flavors of the seasonings to penetrate the meat.
  • Prepare a baking sheet with a rack. Place the pork neck bones pieces on the rack, and roast in a 350 to 375 degrees Fahrenheit preheated oven for at least 2 hours and 45 minutes. (350 degrees preferrably depending on the oven temperature. And depending on the the size of the pork neck bones, either set the oven temperature at 350 or 375 degrees.)
  • Remove from the oven and serve immediately with vegetables and grains.
